Meatball stew with plums and saffron (Khoresht Kofteh Ba Aloo)
Stews are one of the original dishes and a constant basis of Iranian food tables, and in different cities of Iran, they cook stews in different styles and methods. Meatball stew with plums is a very delicious and festive type of stew that has a very easy recipe and is a different and special dish.
Meatball stew with plums and saffron (Khoresht Kofteh Ba Aloo)
Ingredients
- 300 grams Minced meat
- 1 Onion
- ½ cup Barberry
- 10-15 pcs Mixed of dried plums, dried yellow plums, and Prunes
- 2 tbsp Brewed saffron
- 2 tbsp Sumac
- 2 tbsp Black pepper and Turmeric
- 1 tbsp Sugar optional
- Salt as needed
- Oil as needed
- 8 cups Boiling water
Instructions
- Soak the dried plums, Dried yellow plums, and Prunes in advance for at least an hour (To remove any stones).
- Soak the barberries (To remove any stones).
- First, add salt, black pepper, sumac and turmeric to the minced meat and knead the ingredients well. if you don’t have sumac, substitute grated onion.
- then make medium and uniform meatballs and set aside.
- Chop an onion into small pieces and put it in a pan with some oil and heat until the onion becomes soft.
- Add the meatballs. Don't move them around. After one side is firm, turn them over to fry the other side.
- Pour a little turmeric on the onion and pour the meatballs.
- Add the Prunes, Dried yellow plums, and Aloo Bukhara.
- Pour boiling water. It should cover the meatballs.
- Let it cook for 30 minutes. There's no need to cover the pan, as doing so can cause the meatballs to crumble and break.
- Now pour boiled sugar and saffron and stir a little. Let it cook for another 10 minutes.
- Finally, add the washed barberry to the meatballs stew andturn off the stove after 5 minutes.
- Our delicious Meatball Stew is ready to serve, you can eat with saffron Kateh or Barberry Pilaf.Good appetite.
Which plums are suitable for this dish?
I prefer to use some plums, prunes (dried plums or Aloo Bukhara), and even dried yellow plums, as they add a sour yet mellow taste and make the dish more colorful
Why do we add sugar?
The sugar is added to create a balanced and tangy taste, but it is optional. The combination of plums and barberries with sugar is amazing; give it a try.
