Here are how you can do it:

Step 1- Preperation

The first thing you need to do when you want to cook Baghali polo ba morgh is soak the rice in water and salt for 1-4 hours before cooking and then preparing the chicken.

Step 2 - Boil the chickens

This is the most important stage of this dish, Bagali Polo is one of the Iranian dishes with chicken. You have to boil the chickens: Fill a pot with water up to ½ pot. Chop one of the onions into it. Add salt, black pepper, turmeric, and cinnamon.

Put the same pot on the heat and pour some oil into it; if you want to have Gazmakh (Bread Tahdig), you can put lavash in the base of the pot, then pour ¼ drained mix of rice and fava bean into the pot, pour dill and sliced garlic, then pour a layer of rice and fava bean. Repeat this step until the pot is filled.

After filling the pot, pour 3 tbsp of brewed saffron on the rice and make some holes in the rice pyramids. Put the tight lid to prevent the escape of the stream and set the heat on low until simmering for about 40-60 minutes.

Step 4 - Go back to the chickens and make sauce

When the rice is steaming, we go to the chickens. Check the texture of the chicken with a fork, and if it's ready then remove it from the heat.

Then put a pan on the heat and add butter (or oil). Allow it to melt, then pour another chopped onion into the pan and sauté them. After sauteing, add your cooked chicken to the pan.

Then in a bowl, mix 3 tbsp of brewed saffron, tomato paste, lemon juice, 3 tbsp of chicken water, and pepper.

Then pour this mixture into the pan.

For fava bean and rice (Baghali Polo)

  • 3 cups Iranian or basmati rice
  • cups Fava bean Fresh or frozen fava green beans
  • 4 tbsp Dried or fresh dill
  • 2 cloves Garlic
  • 1 tsp Salt

For chickens (Morgh)

  • 4 Chicken breast or thigh
  • 2 Onions
  • 2 tbsp Tomato paste
  • 50 gr Butter Optional
  • 4 tbsp Cooking oil
  • 1 tbsp Lemon juice
  • 5 tbsp Brewed saffron Thick
  • ½ tsp Ground black pepper
  • ½ tsp Red pepper 
  • 1 tsp Turmeric
  • tsp Cinnamon powder
  • 1 tsp Salt

Instructions

  • soak the rice inwater and salt for 1-4 hours
  • Fill a pot with water up to ½ pot. Add your chicken pieces. Water should cover the chickens. Chop one of the onions into it. Add salt, black pepper, turmeric, cinnamon.  Put it on medium heat.
    Put the fava beans in a pot and add twice as much water. Put it on medium heat.
  • Add rinsed rice to the pot and allow the water to boil. Add salt. After 10-15 minutes, check the rice. Now strain the rice and fava beans.
  • Put the same pot on the heat and pour some oil into it. pour ¼ drained mix of rice and fava bean into the pot, pour dill and sliced garlic, then pour a layer of rice and fava bean. Repeat this step until the pot is filled.
    After filling the pot, put the tight lid on. Put it on the heat. Set the heat on low until simmering for about 40-60 minutes.
