How to make Persian Halim?

Ingredients

  • 1 cup Shelled wheat or Bulgur
  • 100 grams Boneless meat Lamb or beef
  • ½ tsp Cinnamon + some for topping
  • tbsp Salt
  • 2 liters Boiling water
  • Oil, Butter, Roghan Kermanshahi, or Roghan Heivani For serving

Instructions

  • Preparation: Finely chop the meat. Soak the shelled wheat.
  • Put the wheat and meat in a pot. Pour about two liters of boiling water over them and place them on low heat
  • Add salt. This step is almost complete after about two and a half hours of cooking.
  • Now you need to mash them. There are two ways to mash Halim mixture:
    Manually, or with a blender.
  • Now put the puree back on the heat. After about 15 to 30 minutes, your homemade Halim is ready. Enjoy it!
