How to make Mutabbaq?

The process of making Mutabbaq includes making dough and preparing stuff and sauce, and we explore their ingredients in separate parts.

Ingredients

Murtabak Dough

  • 2 cups Flour All-purpose flour
  • 2 tbsp Oil
  • 1 tsp Salt
  • ½ cup Boiled water

Filling

  • 200 gr minced meat
  • 1 clove Garlic
  • 1 Egg
  • 1 Onion Chopped
  • 1 Tomato Chopped
  • 1-2 Green onion Medium- About 2 cups chopped green onion
  • ½ tsp Black pepper
  • ¼ tsp Red pepper
  • ½ tsp Thyme
  • ½ tsp Dry parsley
  • ½ tsp Salt
  • 8 tbsp Oil or butter to fry (3 tbsp butter and 5 tbsp oil)

Instructions

  • Bring a cutting board and chop green onions.
Finely chop the onion and garlic.
    Chop the tomatoes finely.
  • Pour the flour and salt into a large bowl. Then add oil to the mixture and blend them. Gradually add the water while kneading the dough until it becomes smooth and elastic.
Then put the dough in a bowl, and pour some oil on it. Cover the bowl with a lid or damp cloth and let it rest for 30 to 60 minutes.
  • Pour oil and butter into a pan and put it on medium heat. Let the butter melt. Add the minced meat.
Then add onion and garlic. Add the spices and salt after frying a little. Fry the minced meat for about 10 minutes.
Then turn off the heat and let it cool.
  • Break an egg and add to the filling.
  • Put a tray and grease it with a little oil. Grease your hands a little too. Divide the dough into two parts. Spread it with a handled rolling pin to make a thin layer. Put half of the filling in the middle of the dough.
  • Pour some oil (or mixture of butter and oil) into a pan and put it on low heat. Fry the mutabbaqs.
