Kuurdak Recipe

Kuurdak is a delicious and easy recipe from Kyrgyzstan

Ingredients

  • 500 grams Fatty beef or lamb diced into small pieces
  • 1 Onion Big - Chopped into quarters
  • 4 Potatoes medium size
  • 2 cloves Garlic 15 gr
  • 1-3 bunch Green onions optional
  • 2 tbsp Oil (either sunflower or veggie)
  • Pepper and salt

Instructions

  • In the first step, cut 500 grams of beef or lamb into bite-sized chunks (cubes 3 centimeters in size are ideal). Then season the meat with salt and pepper (a quarter teaspoon each). Set aside for one hour. (optional)

  • Second, cut one big onion into thin rings or strings; save three-quarters of the onion for cooking and one-fourth for garnishing.

  • Finely mince the garlic cloves.
  • After that, prepare 4 medium-sized potatoes by peeling and dicing them into 1-inch pieces.
  • Now sear the meat on both sides by sautéing it in 2 spoons oil in a pan or a big saucepan. Meat before frying:

  • Now add 3/4 of an onion and a clove of garlic to the saucepan. Saute them until the onions are soft and golden.

  • In the seven steps, put the potato chunks in the pot.

  • After adding potatoes to the meat, fill it with water until it's about a cup deep.
    Now cook for 30 to 60 minutes with the lid on. Monitor the pot's water level and replenish it as required. The dish is done when the potato and pork are tender.

  • Cover the dish with the remaining 1/4 onion slices and serve.
